I love Breakfast.
Thats all there is to it. I like to have breakfast food any time of the day.
I've been having fun recently with pancake recipes.
This morning my mom and I enjoyed Sweet Potato Pancakes with real maple syrup and Pecan sugar-spice topping using the leftover sweet potato casserole we had with dinner on Friday.
(I made the pancakes gluten free by substituting regular flour for rice and oat flour and xanthan gum)
We had hot apple cider with cream as well. Yummers.
